Italian Wedding Soup

5 pounds chicken broth 1 Quart water
2 pounds assorted pasta
Garden Rotini – Wagon Wheels – Fiori
6 pounds frozen pre-cooked meatballs
1 Bag fresh spinach leaves – finely shredded 5 (8 oz) can Italian Diced Tomatoes
4 garlic clove – cut up  

In large sauce pan, bring broth, water and garlic to boil. Add pasta and meatballs. Return to a boil. Cook 7-9 minutes or until pasta is almost tender. Do not drain. Add spinach and tomatoes. Cook 1-2 minutes or until heated through. If desired, sprinkled with Parmesan Cheese when served.


Garlic Pineapple Chicken

1 ½ Pounds boneless skinless chicken breasts cut into 1 ½ inch cubes 2 cups uncooked instant rice
1 can (20 oz) unsweetened pineapple chunks, undrained ½ cup Western dressing
2 Tablespoons Garlic Powder  

In a large skilled coated with cooking spray, cook and stir chicken over medium heat until juices run clear. Meanwhile, cook rice according to package directions.
Stir the pineapple, salad dressing and seasoning blend into chicken. Bring to a boil. Reduce heat; cook, uncovered for 3-5 minutes or until heated through.
Serve with rice: Yield 5 servings.

 

Pumpkin Bars

4 eggs 2 tsp. baking powder
2 cups sugar 1 tsp. baking soda
1 cup vegtable oil 2 tsp. cinnamon
1 can pumpkin (15 oz.) 1/2 tsp. each: ginger, nutmeg, cloves, salt
2 cups flour

Beat eggs.
Add sugar, oil and pumpkin.
Add dry ingredients.
Pour into a (9 x 13) or (8 x 8) or (10 ½ x 15) inch pan.
Bake at 25 minutes at 350 degrees.

Frosting:
   ½ cup butter
   8 oz block of cream cheese
   2-3 cups powdered sugar
   Vanilla

Another one of the children's favorite recipes is Banana Bread!

Bonnie's Banana Bread

1 cup sugar ½ tsp salt
½ cup vegetable oil ½ tsp baking powder
2 eggs, well beaten 3 Tbsp milk
3 bananas (mashed) ½ tsp vanilla
2 cups flour ½ cup chopped nuts
1 tsp baking soda  

Beat oil and sugar, add eggs and bananas. Sift dry ingredients and add to creamed mixture. Stir in milk and vanilla and nuts. Bake in 9x5x3 loaf pan for 1 hour at 350 degrees.

Dorothy's Ramen Noodle Hotdish

2 lb Ground Chuck
1 onion, chopped

½ package coleslaw mix
2-3 Tablespoons soy sauce
6 cups water

2-3 carrots, sliced and pre-cooked

3 pkg chicken flavored Ramen noodles & seasoning

Brown ground chuck and onion. Add coleslaw, soy sauce and water. Simmer until the veggies are cooked. *Add the carrots and Ramen noodles & seasoning. Simmer until noodles are just done. Serve.

* May add 1-2 tablespoons of flour if you want it thickened before adding noodles.
